Parrilla Don Julio在全球top 50餐厅中排第34，是少有的前50里不做fine dining的传统餐厅，除了牛排外没什麼其它花俏的菜色。Parrilla Don Julio的牛肉用的都是草原放牧的Aberdeen Angus牛或是Hereford牛，牛排一律age至少21天，传统炭火烤。正值节日期间，虽然有定位但还是等了将近一个小时。等位期间餐厅提供免费的finger food，还有服务员邀请我们去酒窖参观品酒。酒窖位于地下一层，藏的都是阿根廷各个区域的红白酒，服务员拿出三瓶来自不同区域的酒让我们品尝，还给我们讲解不同地域不同酒庄的特色。等位虽然久，但是并不觉得无聊，觉得服务超级好。前菜点了top50推荐的crispy mollejas (sweetbreads)，简单搭配柠檬和盐，胸腺的口感我还是觉得有些腻，另外感觉有不少腥气，这道不是很喜欢。另一道前菜点了home made sausage香肠拼盘，三种sausage上来非常好吃，服务员帮忙分好，搭配两种酱汁，美味简单又直接地袭来。牛排点了T bone，上桌后服务员帮忙切好，搭配三种酱汁：海鹽，chimichurri醬，和salsa醬。没那么多有的没得，一切都还原最原始的美味，吃了几天fine dining后，这样的传统餐厅深得我意。 好的牛排吃过不少，这里的牛排第一口觉得味道不错，但并不觉得惊艳，多吃几口后方觉得不同。首先没有和牛那种入口即化的油腻，牛排还是喜欢有牛排嚼感的，这样才有吃肉的感觉。整块肉表面焦脆，里面肉质多汁粉嫩，没有肉筋的不适感，肉筋和肥肉的部分都处理的恰到好处，不油不腻，口感筋道，但又很容易咬动。不同熟度的牛肉有着不同的层次，在嘴里不同维度间交汇， 明明是最简单的口感和最原始的味道，回味起来百转千回。十分喜欢！餐厅装修复古，气氛热闹，食客虽多，服务员极其忙碌，但是非常有效率，服务的质量也很高。从每道菜都帮忙切菜分菜，进门有红酒品尝和酒窖参观，还有等位时的免费小时，让人宾至如归。菜单干净简单，卖牛排就认真地卖牛排，牛排做法和排盘不矫情，是吃肉该有的感觉，味道和口感经得起仔细推敲，这家餐厅如果有机会再回BA，我一定会再去。
